Ingredients

  • Mutton 1 kg (keema)
  • 1 tsp - turmeric powder
  • Kuskus 2 tsp
  • Chiranji 1 tsp
  • Garam masala powder 2 tsp
  • Red chilli powder - As per taste
  • salt to taste
  • Egg 1
  • One big onion
  • Cilantro - as per need
  • Mint - as per need
  • green chillies - as per need
  • Thick Yogurt - 2 cups
  • Oil - As per need

How to Make Shikampur Koftha

  • Boil keema with pinch of turmeric powder and salt.
  • Roast kus kus, chiranji, cilantro, mint and green chillies and grind them.
  • After the keema is well cooked, add it to the ground mixture and grind them all once again.
  • Take the ground mixture and add garam masala powder, red chilli powder, egg and mix them all together.
  • Take yogurt in a muslin cloth and to that add salt and the chopped green chillies, the chopped cilantro, the chopped onion and mint.
  • Tie the end of the muslin cloth and keep aside till all the water oozes from the yogurt and it becomes dry.
  • Now, take some keema mixture, flatten it, add some yogurt mixture in it, close it well and then flatten to form a kofta. Shallow fry them till done.
  • Garnish with onion, cilantro and cucumber.
