  • 3 - large cucumbers, peeled and cut into small cubes
  • 10 to 12 - medium sized shrimps
  • 1 - medium onion, finely chopped
  • 1 tsp - Cumin seeds
  • 1 tsp - Ginger paste
  • 1/2 tsp - Turmeric powder
  • 1 tsp - coriander powder
  • 1 - green chilli, slit lengthwise
  • 1/2 tsp - veg masala powder (optional)
  • Salt, as required
  • Oil, as required
  • How to Make Shrimp cucumber stir fry:

    1. Shell the shrimp, and marinate in salt and turmeric for 10 minutes.
    2. Pan fry and keep aside.
    3. In a wide bottomed, non-stick skillet, heat a tbsp of oil, and add the cumin seeds.
    4. Once it starts to splutter, add the ginger paste and saute for a minute or so.
    5. Add onion and chilli and saute till translucent.
    6. Add turmeric, coriander powder and veg masala powder and fry for 2 minutes or until the raw smell vanishes.
    7. Add cucumber and salt, mix well with the spices, and cook covered for 5 to 7 minutes.
    8. Lastly add the fried shrimp; cook for another minute or until all the flavours blend well.
