Ingredients

  • 3 cups - shrimp fried Rice
  • 2 cups - chopped cooked shrimps and sausages
  • 2 cups - Chicken stock/broth (if you're using orzo and not the fried rice)
  • 6 - eggs
  • 1/3 cup - ricotta cheese
  • 1/4 cup - sour Cream
  • 1 cup - chopped scallions for a mild Onion flavour (else use any Onions)
  • 1/4 cup - chopped Parsley
  • 1/4 cup - chopped roasted red peppers/capsicum
  • salt and pepper to taste
  • How to Make Shrimp Fried rice and Sausage Frittata:

    1. Beat the eggs, add the remaining ingredients, including cooked shrimp fried rice and mix well.
    2. Pour the mixture into baking dish and bake at 375 degrees for 25 minutes.
    3. Then, broil for 5 minutes to brown the top.
