Ingredients

  • 3 cups - shrimp fried rice
  • 2 cups - chopped cooked shrimps and sausages
  • 2 cups - chicken stock/broth (if you're using orzo and not the fried rice)
  • 6 - eggs
  • 1/3 cup - ricotta cheese
  • 1/4 cup - sour cream
  • 1 cup - chopped scallions for a mild onion flavour (else use any onions)
  • 1/4 cup - chopped parsley
  • 1/4 cup - chopped roasted red peppers/capsicum
  • salt and pepper to taste

How to Make Shrimp Fried rice and Sausage Frittata

  • Beat the eggs, add the remaining ingredients, including cooked shrimp fried rice and mix well.
  • Pour the mixture into baking dish and bake at 375 degrees for 25 minutes.
  • Then, broil for 5 minutes to brown the top.
