Shrimp Fried Rice with Vegetables is a Thai style rice loaded with cauliflower, cabbage and straw mushrooms. It's a main meal that can be eaten on its own, and does not require any sides.
Ingredients
- 250 g fresh shrimp
- 2 cups cooked steamed rice
- 1 cup cauliflower, sliced
- 1 cup cabbage, sliced
- 1 cup straw mushrooms
- 2 tomatoes, sliced
- 2 eggs
- 1/2 onion, sliced
- 1 tbsp ginger, sliced
- 1 tbsp garlic, chopped
- 3 tbsps cooking oil
- 1 tbsp fish sauce or salt to taste
- 1 tbsp light soy sauce
- Sugar to taste
- 1 tbsp long chilli, sliced and seeded
- 2 tbsps spring onions, chopped
- 2 tbsps fresh coriander
How to Make Shrimp Fried Rice with Vegetables
- In a wok, fry garlic in oil. Add the eggs, shrimp, rice, onion, cauliflower, cabbage and mushrooms, while stirring continuously.
- Add tomatoes, ginger, fish sauce, soy sauce, sugar, chilli, spring onions and coriander.
- Saute well and heat through.
