Ingredients

  • 1 - medium size Onion
  • 2 tbsp - Ginger and Garlic - grated together
  • 1 tsp - black pepper coarsely ground or use a spice of your choice
  • Alternate spices:
  • 1 - fresh chilli and 1/4 cup fresh coriander chopped
  • salt to taste
  • 1 cup - instant mashed Potato - dry
  • 1/4 pound - medium shrimps peeled and cooked
  • Juice of half Lemon or 2 tbsp bottled Lemon juice
  • 2 - eggs lightly beaten
  • 1/8th cup - melted Butter
  • 1 - lightly beaten Egg for dipping
  • Breadcrumbs
  • Oil for deep frying
  • How to Make Shrimp Potato Fingers:

    1. Finely chop the onion, shrimps and the chilli if used.
    2. Mix all the ingredients except the last two. Use water if needed to make dough type consistency.
    3. Roll into small finger shapes.
    4. Dip into eggs then roll in breadcrumbs and deep fry until golden brown.
