Ingredients

  • 1 - medium size onion
  • 2 tbsp - ginger and garlic - grated together
  • 1 tsp - black pepper coarsely ground or use a spice of your choice
  • Alternate spices:
  • 1 - fresh chilli and 1/4 cup fresh coriander chopped
  • salt to taste
  • 1 cup - instant mashed potato - dry
  • 1/4 pound - medium shrimps peeled and cooked
  • Juice of half lemon or 2 tbsp bottled lemon juice
  • 2 - eggs lightly beaten
  • 1/8th cup - melted butter
  • 1 - lightly beaten egg for dipping
  • Breadcrumbs
  • Oil for deep frying

How to Make Shrimp Potato Fingers

  • Finely chop the onion, shrimps and the chilli if used.
  • Mix all the ingredients except the last two. Use water if needed to make dough type consistency.
  • Roll into small finger shapes.
  • Dip into eggs then roll in breadcrumbs and deep fry until golden brown.
