How to Make Simple Ginger Chicken

  • Dice the chicken fillets.
  • Mix with ginger juice, lightly beaten egg whites, salt, pepper, 1 tbsp cornflour and keep covered for 15-20 minutes.
  • Heat the oil for deep frying. Fry chicken pieces and drain on kitchen paper.
  • Mix remaining corn flour with chicken stock.
  • Peel and dice onion, capsicum, ginger.
  • Chop spring onions, keep the white and green parts separately.
  • Heat about 2 tbsp of oil in which chicken was fried. Stir fry onion, ginger, red chilli, capsicum and spring onion bulbs.
  • Add fried chicken. Add Soya sauce, salt, sugar and the corn flour mixture. Cook stirring till it thickens.
  • Serve after garnishing with the green leaves of spring onions.
