Ingredients

  • Chicken breast fillets - 500 g
  • Ginger juice - 2 tsp
  • Egg white - 2
  • Corn flour - 1.5 tbsp
  • Chicken stock - 50 ml
  • Onion - 2, medium size
  • Capsicum - 1
  • Red Chillies - 3 to 4
  • Ginger - 2 tbsp
  • Spring onions - 5 to 6
  • Soya sauce - 2 tsp
  • Sugar - 1 tsp
  • Salt, pepper
  • Oil to deep fry.
  • How to Make Simple Ginger Chicken:

    1. Dice the chicken fillets.
    2. Mix with ginger juice, lightly beaten egg whites, salt, pepper, 1 tbsp cornflour and keep covered for 15-20 minutes.
    3. Heat the oil for deep frying. Fry chicken pieces and drain on kitchen paper.
    4. Mix remaining corn flour with chicken stock.
    5. Peel and dice onion, capsicum, ginger.
    6. Chop spring onions, keep the white and green parts separately.
    7. Heat about 2 tbsp of oil in which chicken was fried. Stir fry onion, ginger, red chilli, capsicum and spring onion bulbs.
    8. Add fried chicken. Add Soya sauce, salt, sugar and the corn flour mixture. Cook stirring till it thickens.
    9. Serve after garnishing with the green leaves of spring onions.
