Ingredients

  • 3 cups - mixed vegetables (bite sized)
  • 2 cups - water
  • 1 cup - fresh grated coconut
  • 1 cup - sour curd
  • 1/2 cup - sliced green mango (if available)
  • 1 tsp - cumin seeds
  • 10 green chillies
  • 1/2 tsp - turmeric powder
  • 1 1/2 tsp - salt
  • 5 tsps - raw coconut oil
  • 1 sprig curry leaf

How to Make Simple Homemade Avial

  • Bring the water to a boil in a two quart saucepan.
  • Add vegetables, mango and turmeric.
  • Allow it to simmer till the vegetables are tender and mixed well.
  • Use a blender to grind the coconut, cumin seeds, green chillies and salt to a fine paste.
  • Add as little water as is necessary to facilitate grinding.
  • Add paste to the vegetables and mix well.
  • Add enough water to make 4 cups of avial and allow it to simmer for 10 mins.
  • Add curd, stir and cook for 2 mins and add raw coconut oil and curry leaf.
  • Stir well.
  • Remove from heat.
