How to Make Simple Mixed Vegetable Curry

  • Cut the onions, potatoes, carrot, beetroot, green chillies and keep it aside.
  • Heat oil in a pan, add mustard, cumin and let it crackle.
  • Then add the curry leaves and chopped green chillies.
  • Add the chopped onions and saute.
  • When it becomes golden in colour, add all the cut vegetables and peas. Saute for 2-3 minutes.
  • Add water to this, cover and cook.
  • When the vegetables are cooked, add the garam masala and coconut milk, stir it.
