  • 2 - small Cucumbers or 1 large.
  • 3 - medium Potatoes or 1 large.
  • 1.5 cups - Tur dal.
  • 3/4 cup - desiccated coconut.
  • 5 - green chilli.
  • 1 spoon - Channa dal.
  • 1/2 spoon - urad dal.
  • Khadi patta-few sprigs.
  • 1/2 spoon - jeera.
  • Salt to taste.
  • How to Make Simple Potato and Cucumber Kootu:

    1. Peel and cut the cucumber, potato into medium pieces.
    2. Take wok and add the veggies with just enough water for it to cook.
    3. Add turmeric and channa dal.
    4. Allow it to cook well.
    5. In a mixer, grind coconut, urad dal, jeera and green chilli into fine paste like chutney and set aside.
    6. Pressure cook the tuvar dal.
    7. When the veggies are done, add tuvar dal, coconut paste and salt and mix well.
    8. Now keep in it on sim so that veggies and gravy mix well.
    9. When done, add seasoning of mustard and urad dal.
    10. Finally, put the curry patta, switch off flame and add it to kootu.
    11. Before serving pour little bit of coconut oil (optional).
