Ingredients

  • 1 tbsp - Butter
  • 1 tbsp - Olive oil
  • 2 tbsp - Onions, minced
  • 1 cup - Fresh pumpkin, cooked
  • 1 tbsp - Garlic, minced
  • 2 cups - Vegetable broth
  • 1 pinch - Saffron
  • 2 tbsp - Heavy cream
  • 1/2 tsp - Extra virgin olive oil
  • Salt and pepper to taste

How to Make Simple Pumpkin Soup

  • Melt butter in a pan and mix it with olive oil.
  • Saute onions in it for about 2 minutes. Add the pumpkin and let it cook for a couple of minutes.
  • Add the garlic and season with salt and pepper.
  • Pour 2 cups of broth to the mixture and bring to a boil. Reduce the heat and simmer for 20 minutes.
  • Let it cool. Blend to get a smooth mixture.
  • Place the pan back on the stove, add the pumpkin mixture, cream, saffron and continue to simmer for another 5 to 7 minutes.
  • Serve in bowls.
  • Garnish with saffron and a drizzle of olive oil.
