  • 8-10 small, round, firm brinjals
  • 3 medium onions (finely chopped)
  • 3 tbsp - roasted groundnuts (powdered coarsely)
  • 3 tbsp - grated fresh coconut
  • 1 tsp - black or other garam masala
  • 1 tsp - chilli powder
  • 1 tsp - coriander powder
  • 1.5 tsp - sugar
  • salt to taste
  • 2 to 3 tbsp - oil
  • 1/2 tsp each of mustard and cumin seeds
  • 1 tsp - garlic-ginger paste
  • 1/4 cup curd

How to Make Simple Stuffed Brinjals

  • Make 2 slits on each brinjal to form a cross, leaving the stalks intact. Drop them into cold, salted water.
  • Mix together the onions, coconut, the dry masalas, curd, ginger-garlic paste, and make a smooth filling. Stuff some of this mixture into each of the brinjals.
  • Heat oil in a non-stick or heavy-bottom pan, add the mustard and cumin seeds wait for them to pop. Then slide in the brinjals slowly.
  • Cover with the remaining mixture.
  • Add 2 cups water. Simmer, covered, till done. Stir once or twice in between.
  • Cook till the brinjals are tender to the touch.
