Ingredients

  • 250 g - Bhindi / Okra / lady's finger
  • 1 - onion, finely chopped
  • 2 - potatoes, cut in cubes
  • 1 tsp - garlic, crushed
  • 4 - green chillies, chopped
  • 1/2 tsp - Turmeric powder
  • 1 tsp - dried Mango powder
  • 1 - chopped Tomato
  • 1/2 cup - Yoghurt
  • 1 tsp - coriander powder
  • 1 tsp - Garam Masala
  • 1 tsp - cumin powder
  • 1/2 tsp - Red Chilli powder/ crushed whole Dried red chilli
  • Salt to taste
  • 2 tbsp - vegetable oil
  • How to Make Sindhi Okra Potato Curry:

    1. In a pan heat a little oil and saute the garlic and onion.
    2. Simmer until translucent.
    3. Now add the chopped potatoes and cook till a little tender.
    4. Add okra and saute for 5-6 minutes.
    5. Now add salt and spices. Mix well.
    6. Cook for 5 minutes till all spices are mixed with okra and potatoes.
    7. Remove from heat and serve hot with chapatti.
