Ingredients

  • Baby brinjals - 6
  • Potatoes - 2 (medium)
  • Onions - 2, large sliced
  • Dry desiccated coconut - 1 cup
  • Red chilli powder- 2 tsps
  • Garam masala - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Hing - 1 pinch
  • Jeera - 1/2 tsps
  • Jaggery - 1.5 tsp
  • salt to taste
  • Onion - 1, chopped.

How to Make Sizzling Stuffed Brinjals

  • Heat oil in a pan. Shallow fry sliced onions and desiccated coconut separately until golden brown.
  • Grind onions and coconut together (the mixture must be thick).
  • Add red chilli powder, haldi, salt, jaggery and garam masala powder to the above. Mix well.
  • Make 2 slits on each brinjal and fill in the above masala.
  • Heat 2 tsps of oil. Add hing, jeera, and 1 chopped onions. Fry for a minute, then add the stuffed brinjals and the remaining masala.
  • Add chopped potatoes. Add some water and cook until the brinjals and potatoes are soft.
  • Serve with some chopped coriander.
