  • 1/2 kg potatoes, boiled and peeled
  • 1/4 kg broccoli
  • 1.5 cups coconut milk
  • 2 tbsp yellow curry paste
  • 2 onions, chopped finely
  • 1/4 cup chopped carrots
  • 3 cups water
  • salt to taste
  • 1/8 tsp pepper powder
  • 2 tsp oil

How to Make Sizzling Thai Yellow Curry

  • Saute onion till transparent. Add water and carrots. Let it boil till the water is reduced to 2 cups.
  • Method for curry:
  • Boil the potatoes.
  • Cook broccoli till half cooked.
  • Heat oil in a pan.
  • Heat the other pan.
  • Put yellow paste and 2 tbsp of coconut milk.
  • Stir till the mixture becomes dry.
  • Add 2 tbsp of broth and continue stirring.
  • When oil separates, add rest of the coconut milk.
  • Add 1.5 cups of vegetable stock.
  • Bring it to a boil.
  • Add potatoes and broccoli.
  • Let it cook till you get the required consistency.
  • Serve with rice.
