Ingredients

  • 100 g- self raising flour
  • 100 g- unsalted Butter
  • 100 g- caster Sugar
  • 25 g- sultanas or Coconut powder or Orange peels
  • 2 -eggs
  • 1 tsp- baking powder
  • 1 tsp -milk
  • 2- 3 drops- flavouring
  • How to Make Small Cakes:

    1. Preheat oven at 200 C. Sieve flour and baking powder.
    2. Cream butter and sugar well.
    3. Add eggs gradually and mix well.
    4. Fold in flour gently and add milk if it is too dry to get a dropping consistency.
    5. Add fruit and flavouring, mixing lightly.
    6. Fill cake case up to 2/3 of volume.
    7. Bake for 15 mins on top shelf.
    8. Allow to cool before serving.
