Ingredients

  • 1 - tender, medium-sized, Snake gourd
  • 2-3 - medium-sized Potatoes
  • 2 - Green chillies
  • 3 - Cloves of Garlic
  • 2 - Shallots
  • A pinch of Turmeric powder
  • salt to taste
  • Oil for frying
  • Rice powder
  • How to Make Snake Gourd Cutlets:

    1. Scrape the snake gourd and cut it in to halves/quarters.
    2. Remove the seeds.
    3. Meanwhile, boil the potatoes
    4. Heat a bit of oil in a pan. Add chopped shallots and crushed garlic.
    5. Fry till onions are soft.
    6. Mash the potatoes. Add the shallot mixture, crushed green chillies, turmeric and salt to taste.
    7. Stuff the snake gourd with the potato mixture.
    8. Cut the stuffed snake gourd in 1/2 cm thick circles.
    9. Stick the potato mixture to the inner sides of the circle if it tends to come out.
    10. Coat with rice powder and shallow fry in a bit of oil.
    11. Serve hot with mint chutney.
