  • 3 cups hard raw papaya (grated)
  • 1/2 cup tender green beans (french beans, lobia or chawli) finely sliced
  • 1/4 cup cashew nuts (whole and roasted)
  • 1 tomato (deseeded and cut into 8 pieces)
  • For Tamarind Chilli Dressing
  • 2 tbsp lemon juice
  • 2 tbsp sugar
  • 2 tbsp finely chopped coriander leaves
  • 1 tbsp tamarind pulp
  • 1 tbsp soy sauce
  • 1 tsp red chilli powder
  • some few green or red chillies (as per taste and finely chopped)
  • salt to taste

How to Make Som Tam Salad (Papaya Salad Thai style)

  • Mix all the ingredients of the dressing together
  • Put papaya and other ingredients in a bowl
  • Pour the dressing and mix well
  • Cover with a cling film and chill for at least an hour so that the flavours penetrate
  • Serve by itself as a starter
