Ingredients

  • 1 liter - Milk
  • 3/4 cup - sooji (rava)
  • 1/2 cup - Sugar
  • 1/2 tsp - Cardamom powder
  • 10-12 strands Saffron
  • 10 Almonds crushed coarsely
  • 5 Pistachios crushed coarsely
  • 1 tsp - Ghee
  • How to Make Sooji Ki Kheer:

    1. Heat ghee in a heavy, deep pan.
    2. Add sooji and stir till lightly roasted.
    3. Boil milk in another pan.
    4. Add sooji, stir continuously so no lumps form.
    5. Cook till the kheer is semi-solid (or preferred consistency is reached).
    6. Add sugar and stir till sugar dissolves.
    7. Add remaining ingredients.
    8. Serve hot.
