  • Sooji (Rava) - 2 cups
  • Onion - 1 (medium)
  • Tomato - 1
  • Ginger paste - 1 tsp
  • 1 cup - mixed vegetables (peas, diced Carrots - par boiled)
  • Oil or Ghee - as required
  • Salt - to taste
  • Mustard and Curry leaves - a few
  • How to Make Sooji Vegetable khichdi:

    1. Saute the rava with 2 tsps of ghee or oil in a pan on medium heat until a very light brown, and keep aside.
    2. Take a deep pan or kadai, heat 3 tsp of oil or ghee, add mustard seeds, curry leaves and let them splutter.
    3. Add the chopped onion and saute until its brown.
    4. Now add the ginger paste to the onion and slightly fry it.
    5. Add the chopped tomatoes and fry on medium heat.
    6. Add the parboiled vegetables and 4 glasses of water.
    7. Wait till the water starts boiling. Once its boils, immediately add the fried rava and keep stirring with a spatula.
    8. Keep stirring the rava till it thickens.
    9. Garnish with coriander leaves.
