Ingredients

  • Sooji (Rava) - 2 cups
  • Onion - 1 (medium)
  • Tomato - 1
  • Ginger paste - 1 tsp
  • 1 cup - mixed vegetables (peas, diced Carrots - par boiled)
  • Oil or Ghee - as required
  • Salt - to taste
  • Mustard and Curry leaves - a few

How to Make Sooji Vegetable khichdi

  • Saute the rava with 2 tsps of ghee or oil in a pan on medium heat until a very light brown, and keep aside.
  • Take a deep pan or kadai, heat 3 tsp of oil or ghee, add mustard seeds, curry leaves and let them splutter.
  • Add the chopped onion and saute until its brown.
  • Now add the ginger paste to the onion and slightly fry it.
  • Add the chopped tomatoes and fry on medium heat.
  • Add the parboiled vegetables and 4 glasses of water.
  • Wait till the water starts boiling. Once its boils, immediately add the fried rava and keep stirring with a spatula.
  • Keep stirring the rava till it thickens.
  • Garnish with coriander leaves.
