Ingredients

  • 1/2 kg - mutton chops (cleaned, washed and drained thoroughly)
  • 1 tsp - red chilli powder (or as per taste)
  • ½ tsp - asafoetida powder
  • ½ tsp - turmeric powder
  • ½ tsp - garam masala powder
  • ½ cup - thick curds (beaten)
  • 3 tbsp - oil
  • 1 cup - water
  • 1 egg (beaten)
  • 50 g - bread crumbs
  • salt to taste
  • oil for shallow frying
  • To be ground into a paste:
  • 1.5 ginger
  • 5 to 6 cloves garlic
  • 3 green chillies (chopped)
  • a handful of coriander leaves (washed and chopped)

How to Make Sookhe Mutton Chops (Maharashtrian Style)

  • Grind the coriander leaves, ginger, garlic and green chillies to a fine paste.
  • Add salt, powdered spices and curds to the coriander paste. Mix well.
  • Marinate the mutton chops in the coriander-curd mixture for an hour.
  • Lightly heat 3 tbsp oil in a pressure cooker.
  • Place the mutton chops in the cooker.
  • Add one cup water and mix well. Pressure cook till 2 whistles.
  • Once the cooker cools completely, open the lid. If there is any water, dry it.
  • Remove in a plate and cool completely.
  • Beat egg in a bowl. Add very little salt and mix well.
  • Dip each mutton chop in the beaten egg, roll it in bread crumbs.
  • Shallow fry the mutton chops in sufficient oil on a low flame till golden. Serve hot.
