How to Make South Indian Chicken Fry

  • Roast the dry red chillies on a low flame.
  • Grind the roasted red chillies, ginger and garlic.
  • Add little water to make a paste.
  • Whisk together egg, corn flour, prepared red chilli paste, peppercorns, turmeric powder and salt.
  • Blend this mixture with the chicken pieces.
  • Mix well. Marinate for 20-30 mins.
  • Heat oil and drop the chicken pieces.
  • Deep-fry the pieces till they crisp up.
