Ingredients

  • Soya chunks - 100 gm
  • Kashmiri chilli powder - 1 tsp
  • Vinegar - 1 tbsp
  • Ginger - 2 tsp, minced
  • Garlic - 2 tsp, minced
  • Onion - 1/2 cup, minced
  • MSG - a pinch (optional)
  • Sugar - 1 tsp
  • Soya sauce - 2 tsp
  • Mango pulp - 1/2 cup
  • Spring onion greens to garnish
  • Oil to shallow fry
  • Salt to taste

How to Make Soya Chunks with Spicy Mango Dressing

  • Soak soya chunks in hot water for 1/2 hour. Drain, cool and squeeze out all the water.
  • Mix chilli powder with vinegar and reserve.
  • Heat oil to a depth of 2 cm in a fry pan.
  • Add soya chunks and fry, stirring briskly till they are brown.
  • Drain and reserve.
  • Retain 2 tbsp of oil in the pan and saute ginger, garlic and onion.
  • Fry till they are brown and fragrant.
  • Add chilli paste and fry for few seconds.
  • Add mango pulp, MSG, soya sauce and sugar.
  • Simmer the contents in the pan for 2-3 minutes.
  • Add the soya chunks and simmer for 1 minute.
  • Remove from fire and garnish with chopped spring onion greens.
  • Serve hot with fried rice or noodles.
