  • Salt to taste
  • 1 tsp - Oil
  • 1/2 cup - Cilantro, chopped
  • 1 tsp - Chaat masala (optional)
  • How to Make Soya Nuggets Bhurji:

    1. Heat 2 cups of water in a pan and pour in the soya flakes into it.
    2. Add a pinch of salt and let it rest while you prepare the tadka/ base for sabzi.
    3. Heat oil in a pan, fry ginger garlic paste in it till it turns light brown.
    4. Add onions and fry for a minute.
    5. Add salt and mix, cook this covered for around 4-5 minutes on medium flame.
    6. Add tomatoes, all the spices except garam masala and chaat masala.
    7. Cook covered till the tomatoes get mushy, for around 7-8 minutes on low-medium flame.
    8. While the tomatoes are getting cooked, squeeze out all the water from the soaked soya and drain the flakes well.
    9. Mix the soya flakes and give it a nice stir.
    10. Cook covered on low flame for another 5-6 minutes and turn off the flame.
    11. Sprinkle a liberal dose of garam masala and a dash of chaat masala on top along with chopped coriander leaves.
    12. Serve hot.
