How to Make Soya Vegetable Pulao

  • Pick and soak the rice. Soak it in double its volume of water for half-hour.
  • Soak the soya chunks in water for 5 mins.
  • Heat oil in a heavy-bottom pan, fry the clove, cardamom, cinnamon, bay leaf and cumin seeds.
  • Fry the thinly sliced onions to a golden brown colour.
  • Add the chopped vegetables, soaked chunks and saute for a few mins. Add soaked rice and fry a little.
  • Add water, salt and cook on a slow fire till done.
  • Keep the rice covered for a few minutes after cooking.
  • Serve hot with raitha.
