Ingredients

  • 250 gm - fusilli
  • 200 gm - green beans, cut in small pieces
  • 300 gm - canned soybeans
  • 1 - avocado, cut in small squares
  • 1 - red bell pepper, seeded, chopped
  • 2 tsp - curry powder
  • 6 tbsp - mayonnaise
  • 6 tbsp - soy Yoghurt
  • 1 tbsp - Vinegar
  • How to Make Soybean salad:

    1. Boil the fusilli (pasta) in water according to instructions on package. Drain and cool.
    2. Boil the green beans for about 6 mins in water. Drain and cool.
    3. To make the curry dressing, mix the yogurt, mayonnaise and curry powder.
    4. Add curry dressing to beans and fusilli and toss gentle.
    5. Bring to taste with salt and pepper.
    6. Serve the soyabean salad cold.
