  • black/red Rice/ broken matta Rice - 1 cup
  • Olive oil - 1 tbsp
  • Garlic 2 cloves, peeled
  • Bay Leaf 1
  • Lime juice to taste
  • salt to taste
  • How to Make Spanish Rice Soup:

    1. Wash and soak black or red rice in water overnight or for 6-8 hours. Drain and reserve.
    2. Heat oil in a pressure cooker.
    3. Add garlic and bay leaf and fry till fragrant.
    4. Add the rice and 6 cups of water.
    5. Pressure cook for 12 minutes.
    6. Add salt and lime juice to taste before serving.
    7. Soya oil or sunflower oil may be used instead of olive oil.
    8. A lightly seasoned dry vegetable sabji will be a good accompaniment for this soup.
    9. Matta rice need not be soaked.
    10. Wash drain and use.
    11. Simmer gently instead of pressure cooking.
