Ingredients

  • Idli Rice (boiled) - 5 cups
  • Whole Urad Dal - 1 cup
  • Fenugreek seeds - 2 tsp
  • salt to taste
  • For seasoning: Chopped Green chillies - 1 tsp
  • Ginger 2 tsp
  • Curry leaves 1 tsp
  • Chopped Cashewnuts 2 tsp
  • Grated Coconut - 3 tsp
  • Soaked Channa dal - 3 tsp
  • Hing powder - 2 tsp
  • Black pepper Corn - 2 tsp
  • How to Make Special Idli:

    1. Soak rice overnight.
    2. Soak the urad dal and fenugreek seeds in the morning for 3 hours.
    3. Grind the soaked rice separately to a coarse consistency (like rava).
    4. Grind the urad dal to a fine paste (fluffy and soft).
    5. Mix the rice and dal paste, add salt and let the dough ferment for 5-6 hours.
    6. Mix all the ingredients for seasoning in the dough.
    7. Pour the dough in the idli mould and steam for 7 -8 mins.
    8. Serve with any chutney.
