Ingredients

  • 1 bunch spinach
  • 3 green chillies
  • 1 medium sized onion
  • 8 to 10 flakes garlic
  • 300 gm - wheat flour
  • 1 tsp - cumin seeds
  • 1 tsp - ajwain seeds
  • 1.5 tsp - red chillies powder
  • 2 tbsp - oil
  • 4 to 5 tbsp - ghee for roasting parathas
  • salt to taste
  • water to make dough

How to Make Special Palak Parathas

  • Finely chop the spinach, green chillies and onion.
  • Coarsely crush the garlic flakes.
  • Wash the spinach well and put it in boiling water for a couple of minutes.
  • Drain out the water and cool the spinach.
  • Take the wheat flour in a thali.
  • Add it to the spinach, green chillies, onion, garlic, cumin seeds, ajwain, red chillies powder, oil and salt to taste.
  • Take just enough water to make a little stiff dough.
  • Make dough just before you want to make the parathas as spinach has a lot of water content.
  • Divide the dough into equal portions.
  • Roll each portion into a triangular paratha.
  • Roast the paratha on a pre-heated tawa on a medium flame applying little ghee when flipping sides till the parathas are golden in colour.
  • Serve hot with boondi raitha.
