Ingredients

  • Palak - 1 bunch
  • Rice - 1.5 cups
  • Onion - 1
  • Ginger-garlic-cilantro-chillies paste - 1 tsp
  • Coriander powder - 1/2 tsp
  • Cumin powder - 1/4 tsp
  • Garam Masala powder - 1/2 tsp
  • Asafoetida - 1/4 tsp
  • Oil - 1 tsp
  • Salt to taste
  • Cheese (optional)
  • Butter (optional)

How to Make Special Palak Rice

  • Soak rice for 30 mins. Cook and keep aside.
  • Clean and wash the spinach. Boil it for 5 mins. Strain and puree it.
  • Heat oil in a pan. Add asafoetida and chopped onion.
  • Saute till the onion turns light brown.
  • Add the ginger-garlic paste. Saute for 2 min.
  • Add the powdered masalas and stir for another 5 mins on medium flame.
  • Add the palak paste and some water if required.
  • When it boils, add the cooked rice and salt. Mix well.
  • Top it with butter and grated cheese (optional). Keep on dum for 10-15 mins or in pre-heated oven at 325 F for 10-15 mins.
  • Serve with onion-cucumber-tomato raitha and papad.
