Ingredients

  • Palak - 1 bunch
  • Rice - 1.5 cups
  • Onion - 1
  • Ginger-garlic-cilantro-chillies paste - 1 tsp
  • Coriander powder - 1/2 tsp
  • Cumin powder - 1/4 tsp
  • Garam Masala powder - 1/2 tsp
  • Asafoetida - 1/4 tsp
  • Oil - 1 tsp
  • Salt to taste
  • Cheese (optional)
  • Butter (optional)
  • How to Make Special Palak Rice:

    1. Soak rice for 30 mins. Cook and keep aside.
    2. Clean and wash the spinach. Boil it for 5 mins. Strain and puree it.
    3. Heat oil in a pan. Add asafoetida and chopped onion.
    4. Saute till the onion turns light brown.
    5. Add the ginger-garlic paste. Saute for 2 min.
    6. Add the powdered masalas and stir for another 5 mins on medium flame.
    7. Add the palak paste and some water if required.
    8. When it boils, add the cooked rice and salt. Mix well.
    9. Top it with butter and grated cheese (optional). Keep on dum for 10-15 mins or in pre-heated oven at 325 F for 10-15 mins.
    10. Serve with onion-cucumber-tomato raitha and papad.
