Ingredients

  • 1 cup - Basmati rice
  • 1 cup - Finely cut vegetables (beans, cauliflower, onion, carrot)
  • 1/2 tsp - Ginger paste
  • 1/2 tsp - Garlic paste
  • 4 - Cloves
  • 2 - Cinnamon
  • 1 - Bay leaf
  • Salt to taste
  • 1 tbsp - Ghee
  • Roasted cashews- 6-7
  • Oil to fry.

How to Make Special Vegetable Pulao

  • Soak the basmati rice in water for 10 mins.
  • Heat ghee in a pan and saute the rice for 5 mins.
  • Keep aside.
  • Now heat 1 tbsp of oil and saute the cloves, cinnamon, bay leaves and onion until pink.
  • Add all the finely cut vegetables and saute for another 5 mins.
  • Now add the basmati rice and 3-4 cups of water and let it cook.
  • Garnish with roasted cashews and finely chopped coriander leaves.
  • Serve hot with raitha.
