Ingredients

  • 2 cups - packed Brown sugar
  • 3 cups- all-purpose flour
  • 1 tbsp - baking soda
  • 2 tbsp - ground Cinnamon
  • 2 tbsp - ground Cloves
  • 2 tbsp - ground allspice
  • 2 tbsp - ground Nutmeg
  • 4 -eggs
  • 2 tbsp - Lemon zest
  • 2 tbsp - vanilla extract
  • 1/2 cup - brandy
  • 1.5 cups - Raisins
  • 1.5 cups - chopped nuts
  • 1.5 cups - dried mixed fruit
  • 1.5 cups - butter, melted
  • 1.75 cups - brandy
  • How to Make Spiced Christmas Fruitcake:

    1. Preheat oven to 225 degrees F (110 degrees C). Grease and flour a tube pan.
    2. In a large bowl, combine sugar, flour, soda, spices, eggs, lemon rind, vanilla, 1/2 cup brandy, fruit, nuts, and melted butter or margarine.
    3. Mix thoroughly. Pour into prepared pan.
    4. Bake for 1 hour, or until a tester inserted in the centre comes out clean.
    5. Cool on a wire rack.
    6. Wrap cooled cake in foil.
    7. Sprinkle 2 tbsp of brandy over the cake every day for 2 weeks.
