Ingredients

  • 2 cup - basmati rice (wash and soak it in lukewarm water for 20 mins)
  • 1/2 cup - coconut milk
  • 3 cups - water
  • 1 tbsp - ginger, grated
  • 6 - cardamom, crushed
  • 6 - cloves
  • 6 - cinnamon small sticks
  • 3 - bay leaves
  • 5 - green chillies
  • 5 - garlic flakes, minced
  • 1/2 cup - onions, finely chopped
  • 1 tbsp - cashew nut
  • 3 tbsp - oil and ghee each
  • Salt to taste

How to Make Spiced up Coconut Milk Rice

  • Heat oil and ghee mix in a kadai.
  • Season with green chillies, ginger, garlic, onion, cashew nuts, cloves, cinnamon and bay leaves.
  • Fry the mixture till onions turn brown and the raw smell goes
  • Add thick coconut milk to the mixture and allow it to boil.
  • Remove the kadai from the stove and let cool.
  • Add soaked rice, 3 cups of water and salt to the above and cook it in a rice cooker/pressure cooker for 1 whistle.
