Ingredients

  • 1 sachet - cous cous
  • Hot water
  • 1 - orange bell pepper
  • 1 - large red onion
  • 2 - medium tomatoes
  • 4 - green chillies
  • 2 tbsp - lemon juice
  • 1 tbsp - paprika or ground black pepper
  • 4 tbsp - butter or margarine
  • salt to taste

How to Make Spicy Cous Cous

  • Chop the bell pepper, onion and tomatoes into small pieces.
  • Boil half a glass of water. Pour over the cous cous until it covers it completely and leave to soak.
  • Heat a large non-stick pan for 2-3 mins and add the butter.
  • Add chillies and wait for it to splutter. Then add the chopped bell peppers and onions.
  • Cook them till they are half cooked (i.e. a bit crunchy but cooked).
  • Add the salt, lemon juice and pepper/paprika and stir.
  • Add the cous cous and fold it in.
  • Remove from heat, add chopped tomatoes and fold them in again.
