Ingredients

  • 4 - boiled eggs
  • 2 - medium onions
  • 1 - tomato
  • 3 - green chillies
  • 2 tsps - coriander powder
  • 5 cloves - garlic
  • 1 inch - ginger
  • 1 tsp - jeera
  • 1/2 tsp - garam masala
  • A pinch - turmeric powder
  • 3 tbsps - oil
  • salt to taste
  • Water as needed

How to Make Spicy Egg Curry

  • Make a paste of 1 onion, garlic, ginger and green chillies.
  • In a pan, heat oil and add jeera. When it splutters, add the remaining onion (sliced) and fry till golden brown.
  • Add finely chopped tomato and fry it till it turns mushy.
  • Add the ground paste, turmeric powder, coriander powder and salt.
  • Keep frying till you see the oil separating.
  • Add water if needed. Finally, add the boiled eggs (make vertical slits on the sides of the eggs).
  • Simmer for 2 minutes, then sprinkle with garam masala and remove from heat when the curry turns thick.
