Ingredients

  • 1/2 kg -eggplant, cut lengthwise
  • 2 medium - onions, chopped
  • 2 - tomatoes
  • For Masala:
  • 1 tbsp - Bengal gram
  • 1 tsp - coriander seeds
  • 2 - cloves
  • 2 - cardamom
  • A bit of Cinnamon
  • A few peppercorns
  • 3-4 flakes - garlic
  • A small piece of ginger
  • 2 tbsp - oil
  • Red chilli powder
  • Turmeric powder
  • 1/4 cup - water
  • salt to taste.
  • Coriander leaves, chopped

How to Make Spicy Eggplant

  • Roast all the ingredients for the masala.
  • Separately saute onions and tomatoes.
  • Grind this along with the roasted masala to a fine paste.
  • Fry this paste, add eggplant, turmeric powder, chilli powder and salt.
  • Then add water and cook on a medium flame till done.
  • Garnish with coriander leaves and serve hot.
