Ingredients

  • 1/2 kg -eggplant, cut lengthwise
  • 2 medium - onions, chopped
  • 2 - Tomatoes
  • For Masala:
  • 1 tbsp - Bengal Gram
  • 1 tsp - Coriander seeds
  • 2 - Cloves
  • 2 - Cardamom
  • A bit of Cinnamon
  • A few peppercorns
  • 3-4 flakes - Garlic
  • A small piece of Ginger
  • 2 tbsp - oil
  • Red Chilli powder
  • Turmeric powder
  • 1/4 cup - water
  • salt to taste.
  • Coriander leaves, chopped
  • How to Make Spicy Eggplant:

    1. Roast all the ingredients for the masala.
    2. Separately saute onions and tomatoes.
    3. Grind this along with the roasted masala to a fine paste.
    4. Fry this paste, add eggplant, turmeric powder, chilli powder and salt.
    5. Then add water and cook on a medium flame till done.
    6. Garnish with coriander leaves and serve hot.
