Ingredients

  • For rice:
  • Rice - 2 cups soaked for 2 hours in water
  • Cloves - 5
  • Cinnamon stick - 1
  • Pepper corns - 5
  • Masala elaichi - 1
  • Bay leaf - 4
  • Other ingredients:
  • Ghee - 4 tbsp
  • Jeera - 1 tsp
  • 2 - small green chillies finely chopped
  • 1tbsp - garlic paste
  • 1 tbsp - ginger paste
  • Palak puree - 1 cup
  • Besan - 3 tbsp
  • 1 - onion chopped lengthwise and deep-fried till golden brown
  • 1 tbsp - fried cashews
  • 2 tbsp - chopped coriander
  • Lemon juice
  • Salt to taste

How to Make Spicy Palak Rice

  • Cook the soaked rice with spices and set aside.
  • In a small kadai, heat 2 tbsp ghee.
  • Then add besan and roast well till the besan turn light red-brown.
  • Add palak puree and make a semi-thick paste.
  • Add salt.
  • In another kadai heat ghee and add jeera. Roast till brown.
  • Add green chillies, garlic and ginger paste.
  • To this tadka, add rice, salt and mix well.
  • Layer rice with palak puree, top with fried onions, cashews, coriander and sprinkle lemon juice.
  • Serve hot.
