How to Make Spicy Vegetable Kurma

  • Chop finely onion and tomato. Chop all other vegetables into cubes.
  • In a kadai, season 2 dry red chillies and saute onions till golden brown.
  • Add the ground masala to it and saute till the oil separates.
  • Now add all vegetables and saute for 5 minutes.
  • Add sufficient water and salt.
  • Cook till the vegetables are finely cooked or cook for one whistle in a pressure cooker.
  • Garnish with fresh coriander and curry leaves.
  • Serve hot with puris, chapattis, parathas.
