Ingredients

  • 2 cups - fresh Spinach
  • 1/2 cup - finely chopped Carrots
  • 1/4 cup - chopped Spring onions
  • 2 whole-wheat bread slices, slightly toasted
  • 2 small Lettuce leaves
  • 1 tbsp - chopped Parsley
  • 2 to 3 tbsp - water
  • 1 tbsp grated cheese
  • a dash of ground Nutmeg
  • salt and pepper to taste
  • How to Make Spinach and Carrot Sandwich:

    1. Remove the hard stems from the spinach, wash the spinach under running water and chop.
    2. Place all the ingredients in a pan with 2 to 3 tbsp. water.
    3. Cover and cook for 5-6 mins. Dry out the water.
    4. Add salt and pepper to taste. Mix well.
    5. Place a lettuce leaf over each slice of bread.
    6. Place spoonful of the spinach-carrot mixture on it.
    7. Sprinkle cheese over it. Serve warm.
