Ingredients

  • 1 Box (10 pz)- Frozen Chopped Spinach
  • 1 Onion, Chopped
  • 1 tsp- Salt
  • Fresh Ground Black Pepper
  • 1-2 Cloves Garlic (Crushed)
  • 1 cup- Chedder Cheese
  • 1/2 cup- Milk
  • Olive oil for Sauteing
  • 1 Box- Puff Pastry
  • How to Make Spinach Diamond Puffs:

    1. Preheat oven to 425 degrees (F). In a medium skillet, saute onions until they start to brown.
    2. Add thawed spinach, salt and pepper and garlic.
    3. Stir and heat for a minute.
    4. Add cheese and mix so that it coats all the mixture.
    5. Add milk and stir until it thickens (10 mins.)
    6. Once thick, set aside to cool.
    7. The mixture should be thick and somewhat dry.
    8. Roll out 1 puff pastry into a 12" thick square.
    9. Using a pizza slicer, cut into sixteen 3 inch squares.
    10. Put cooled filling into the centre of each square and fold two opposite corners of each square up over the filling. Pinch together firmly and twist into shapes.
    11. Place on a baking sheet and brush with butter or egg wash for shine. Then Bake at 400 degrees F for 18-20 mins.
