Ingredients

  • 1 bunch - fresh spinach, torn
  • 1 cup - chopped Onion
  • 2 cups - Chicken broth
  • 1 tsp - Olive or Canola Oil
  • 1.5 cups - uncooked long grain Rice
  • 2 cups - water
  • 1/2 tsp - salt
  • 1/8 tsp - pepper
  • 1/4 cup - shredded Parmesan cheese
  • How to Make Spinach Rice Casserole:

    1. In a large saucepan, saute onion in oil until tender.
    2. Add rice; cook and stir for 2 minutes.
    3. Add broth and water, bring to a boil.
    4. Reduce heat, cover and simmer for 15 mins.
    5. Stir in the spinach, salt and pepper, cook until spinach is wilted.
    6. Transfer to a 2 qt. baking dish coated with non-stick cooking spray.
    7. Sprinkle with parmesan cheese.
    8. Cover and bake at 375 degree F for 20-25 mins or until rice is tender.
