Ingredients

  • 1 bunch - fresh spinach, torn
  • 1 cup - chopped onion
  • 2 cups - chicken broth
  • 1 tsp - olive or canola oil
  • 1.5 cups - uncooked long grain rice
  • 2 cups - water
  • 1/2 tsp - salt
  • 1/8 tsp - pepper
  • 1/4 cup - shredded Parmesan cheese

How to Make Spinach Rice Casserole

  • In a large saucepan, saute onion in oil until tender.
  • Add rice; cook and stir for 2 minutes.
  • Add broth and water, bring to a boil.
  • Reduce heat, cover and simmer for 15 mins.
  • Stir in the spinach, salt and pepper, cook until spinach is wilted.
  • Transfer to a 2 qt. baking dish coated with non-stick cooking spray.
  • Sprinkle with parmesan cheese.
  • Cover and bake at 375 degree F for 20-25 mins or until rice is tender.
