Ingredients

  • 2 cups - idli rice (parboiled rice)
  • 1/4 cup - rice flakes/aval/poha
  • 3 to 4 cups - sour butter milk
  • 1/4 tsp - cooking soda
  • As needed - oil and salt

How to Make Sponge dosa

  • Soak washed rice and aval together, in buttermilk overnight.
  • In the morning, drain the excess buttermilk if any, and grind to a smooth batter, a little thinner than the regular idli dosa batter.
  • Add salt, cooking soda and mix well.
  • Heat a tawa, pour a ladle full of batter and drizzle oil.
  • Do not spread the batter.
  • Cook covered over a medium flame for a minute.
  • Super soft spongy dosa is ready to eat.
  • Serve with a spicy chutney.
