  • 2 cups - idli Rice (parboiled Rice)
  • 1/4 cup - Rice flakes/aval/poha
  • 3 to 4 cups - sour Butter milk
  • 1/4 tsp - cooking soda
  • As needed - oil and salt
  • How to Make Sponge dosa:

    1. Soak washed rice and aval together, in buttermilk overnight.
    2. In the morning, drain the excess buttermilk if any, and grind to a smooth batter, a little thinner than the regular idli dosa batter.
    3. Add salt, cooking soda and mix well.
    4. Heat a tawa, pour a ladle full of batter and drizzle oil.
    5. Do not spread the batter.
    6. Cook covered over a medium flame for a minute.
    7. Super soft spongy dosa is ready to eat.
    8. Serve with a spicy chutney.
