These green veggies are also a great source of Vitamin A, C, and K. So, a Spring Onion Curry is not just tasty; it has amazing health benefits too. What fun!

To make Spring Onion Curry, firstly chop the washed greens finely, both the white and green together. Next add curry leaves, cumin seeds, and mustard seeds to heated oil and allow them to splutter before adding the chopped greens and sauté them.
Add salt to the mixture, and mix it well, allowing the salt to seep in. after cooking this mixture for about one to two minutes, add about 3 tbsp. of besan, garam masala, and red chilli powder to the greens mixture, and mix it well.

This mixture needs to be sautéed well until the besan in the mixture is cooked. Serve this Spring Onion Curry with parotta and raita and watch everyone lick their fingers.

How to Make Spring onion Curry

  • Wash and chop the spring onions finely (both the green and white part together).
  • Heat oil in a kadai and splutter the mustard seeds, cumin seeds and curry leaves. Then add the chopped spring onion and saute.
  • Add the salt and mix well.
  • Allow this to cook for 1- 2 mins.
  • Now add the besan, red chilli powder and garam masala and mix well.
  • Saute until the besan gets cooked.
  • Serve hot.
