Ingredients

  • Squash – 450 grams
  • Potato – 3 (about 450 grams)
  • Brown Onion – 2 nos (about 100 grams)
  • Green chillies – 4 nos
  • Fenugreek Seeds – ¼ tsp
  • Nigella Seeds – ¼ tsp
  • Cumin seeds – ¼ tsp
  • Mustard Seeds – ¼ tsp
  • Kashmiri Red Chilli Powder or Paprika – 1 tbsp
  • Turmeric powder – ½ tsp
  • Curry leaves – 2 sprigs
  • Oil – 2 tbsp
  • Salt to taste
  • Lemon Juice – as per taste.
  • How to Make Squash and potato stir-fry:

    1. Cut squash and potato into 1×1 inch size cubes. Finely slice the onions, and cut the green chillies lengthwise.
    2. Heat oil in a non-stick pan.
    3. Add fenugreek, nigella, cumin, mustard and saute for about 30 seconds.
    4. Add curry leaves and onion, saute for another 2 minutes.
    5. Now add squash, potato, green chillies, turmeric powder, chilli powder and salt. Stir and mix in all ingredients, cover and cook on medium flame for 15 mins.
    6. Squeeze a generous amount of lime juice just before serving.
