  • eggs - 8
  • Grated Jaggery or Brown sugar - 2 cup
  • Thick Coconut Milk - 1 cup
  • Nutmeg powder - 1/2 tsp
  • Cardamom powder - 1/2 tsp
  • Roasted Cashew nuts - 2 tbsp, finely chopped
  • How to Make Sri Lankan Watalapam:

    1. Dissolve jaggery or brown sugar in coconut milk.
    2. Beat eggs lightly and mix with sweet coconut milk.
    3. Strain the mixture through a thin cloth.
    4. Stir in the nutmeg and cardamom powders.
    5. Pour the mixture in a pudding mould.
    6. Cover the mould with a lid and place in simmering water.
    7. Cook the pudding in this for 30 minutes.
    8. Open the lid and sprinkle cashew nuts on top.
    9. Cover again and cook for 10 minutes.
    10. Serve warm or chilled from the mould.
