  • 2 -ripe firm Star fruit
  • 6- scoops vanilla ice-cream
  • 2 tbsp.- Honey or light Molasses
  • 1 tsp.- butter, softened
  • 1 tsp. -sugar
  • For Corn flour caramel
  • 1 tbsp. -corn flour
  • 2 tbsp. -sugar
  • 1/2 cup- water
  • How to Make Star fruit Melba:

    1. Put plenty of water to boil and add 1 tsp. sugar. Put star fruit in, cover and simmer for a minute.
    2. Remove carefully, drain and dab away water.
    3. Cool a little and peel off skin carefully.
    4. Halve fruit vertically first, then horizontally.
    5. Discard all seeds, with knife point.
    6. Warm butter and honey in a non-stick, flat bottomed pan.
    7. Add skinned fruit, gently turn around till fully coated.
    8. When fruit begins to sizzle lightly, take off fire.
    9. Keep aside, warm, till required. To make Corn flour Caramel
    10. Heat sugar in small pan, till brown and fully melted.
    11. Add water, bring to a boil.
    12. Dissolve corn flour in 1 tbsp. water, add to caramel.
    13. Stir continuously till transparent again. To Serve
    14. Place 2 scoops of ice-cream in individual bowl.
    15. Place 2-3 pieces of stewed carambola with ice-cream.
    16. Drizzle some caramel over both.
    17. Serve immediately.
