Ingredients

  • 2 -ripe firm star fruit
  • 6- scoops vanilla ice-cream
  • 2 tbsp.- honey or light molasses
  • 1 tsp.- butter, softened
  • 1 tsp. -sugar
  • For corn flour caramel
  • 1 tbsp. -corn flour
  • 2 tbsp. -sugar
  • 1/2 cup- water

How to Make Star fruit Melba

  • Put plenty of water to boil and add 1 tsp. sugar. Put star fruit in, cover and simmer for a minute.
  • Remove carefully, drain and dab away water.
  • Cool a little and peel off skin carefully.
  • Halve fruit vertically first, then horizontally.
  • Discard all seeds, with knife point.
  • Warm butter and honey in a non-stick, flat bottomed pan.
  • Add skinned fruit, gently turn around till fully coated.
  • When fruit begins to sizzle lightly, take off fire.
  • Keep aside, warm, till required. To make Corn flour Caramel
  • Heat sugar in small pan, till brown and fully melted.
  • Add water, bring to a boil.
  • Dissolve corn flour in 1 tbsp. water, add to caramel.
  • Stir continuously till transparent again. To Serve
  • Place 2 scoops of ice-cream in individual bowl.
  • Place 2-3 pieces of stewed carambola with ice-cream.
  • Drizzle some caramel over both.
  • Serve immediately.
