Ingredients

  • 1 - large Aubergine
  • 2 inches - grated root Ginger
  • 2 Cloves - garlic, sliced
  • 2 tsp - curry powder
  • 1 tsp - cumin powder
  • 1 tsp - chilli powder
  • 1 tsp - Turmeric powder
  • 5 tbsp - chopped Coriander leaves
  • 1 cup - vegetable oil
  • How to Make Stewed Aubergines:

    1. Heat the vegetable oil and fry the finely chopped onions until translucent.
    2. Add the curry powder, cumin powder, sliced garlic, and grated ginger and stir fry for 2 minutes.
    3. Chop the aubergine and add to the pan along with turmeric and chilli powder.
    4. Simmer on medium heat for 20-30 minutes until the aubergine is soft.
    5. Drain as much oil as you can.
    6. Garnish with the coriander leaves.
    7. Serve hot with rice and chapatis.
