How to Make Stewed Aubergines

  • Heat the vegetable oil and fry the finely chopped onions until translucent.
  • Add the curry powder, cumin powder, sliced garlic, and grated ginger and stir fry for 2 minutes.
  • Chop the aubergine and add to the pan along with turmeric and chilli powder.
  • Simmer on medium heat for 20-30 minutes until the aubergine is soft.
  • Drain as much oil as you can.
  • Garnish with the coriander leaves.
  • Serve hot with rice and chapatis.
