Ingredients

  • 1.5 cups - mixed seasonal vegetables
  • 1/2 cup - onion, finely chopped
  • 1/2 cup - grated coconut
  • 1/4 cup - green peas
  • 1/4 tsp - turmeric powder
  • 3 to 4 dry red chillies
  • 1 tsp - coriander seeds
  • 1 tsp - poppy seeds
  • 1 piece cinnamon
  • 1 cm piece ginger
  • 8 cloves garlic
  • 2 tbsp - coriander leaves, chopped
  • 1 tbsp - roasted Bengal gram
  • salt to taste
  • 3 cloves
  • 3 tbsp - oil

How to Make Stewed Vegetable Saagu

  • Cook vegetables with water, salt and turmeric.
  • Dry roast chillies, coriander seeds, poppy seeds, cloves and cinnamon and powder them together.
  • Grind ginger, garlic, coriander leaves, coconut and roasted gram together to a fine paste.
  • Heat the oil and fry onion till golden brown.
  • Add the ground paste and fry for 2 minutes.
  • Add the powdered Masala and 1 cup of water and simmer for 5 minutes.
  • Add the cooked vegetables and simmer for 3 more minutes.
  • Serve hot with Poori or Chapatti
  • The consistency of this dish is like Kurma.
