Ingredients

  • 1 -small head broccoli
  • 1 -carrot peeled, sliced thinly
  • 1- cucumber sliced thinly
  • 1 -onion sliced thinly
  • 1- cabbage leaf shredded coarsely
  • 1- celery stalk, cleaned and sliced thinly
  • 4-5 -French beans, sliced diagonally
  • 1 -zucchini sliced thinly
  • 2- green chillies chopped finely
  • 2 flakes -garlic chopped finely
  • 1 inch -ginger chopped finely
  • 1 tbsp. white vinegar
  • 1 tbsp. corn flour
  • 1 tsp. soya sauce
  • salt
  • 1 tbsp. olive oil

How to Make Stir fried Mixed Vegetable Platter

  • Put half green chillies in 2 cups salted water. Bring to boil, add broccoli, simmer for 2 minutes.
  • Drain broccoli in colander, run tap water over it till cooled.
  • Heat oil in non-stick pan, add carrots, beans, stir-fry for 2-3 minutes.
  • Add onions, and all other vegetables. Stir-fry till vegetables are bright and crunchy.
  • Dissolve ginger, garlic, remaining chillies, salt, sauce, vinegar, corn flour, in 1 cup water.
  • Add to stir fried vegetables, stir and cook till gravy is transparent and thick.
  • Add broccoli, toss to mix veggies well and blend flavours.
  • Serve hot and fresh with cocktails, mocktails, or as an accompaniment.
