  • 8 - brinjals (medium size, round ones preferred )
  • 6 - green chillies
  • 2 bunches - coriander
  • 1 small cup - oil
  • salt to taste
  • 1/4 tbsp - tamarind paste

How to Make Stuffed Brinjal Curry with green chillies

  • Make a paste of green chillies and coriander leaves. Add salt and mix well.
  • Cut brinjals into 4 pieces vertically such that the pieces hold together at one end.
  • Stuff sufficient green chilli and coriander paste into the brinjals.
  • Heat oil in a thick-based pan and fry the brinjals.
  • Add tamarind paste after the brinjals have been fried for a few minutes.
  • Stir the brinjals till they are fried on all sides.
  • Tastes good with rotis or with white rice and ghee.
