  • 1/2 kg - small purple Brinjals
  • 1 cup - finely chopped Onions
  • 2 tsp - aamti masala (If aamti masala is not available, use 1 tsp sambar powder mixed with 1 tsp garam masala.)
  • Salt, to taste
  • 1 tbsp - Jaggery powder (optional)
  • 2-3 tbsp - oil
  • How to Make Stuffed Brinjal (Eggplant) Curry:

    1. Wash brinjals, cut away the stalk. Slit each brinjal into 4, keeping them joint at the other end.
    2. Combine onions, aamti masala, salt, jaggery and 1 tbsp of oil together.
    3. Stuff the brinjals with the masala mixture. Arrange them in a flat microwave safe dish, bigger ones on the outer side and smaller ones in centre.
    4. Pour the remaining oil over them.
    5. Cover and cook full power for 8-10 mins.
    6. Stir and cook uncovered for 5-7 mins stirring once after 3-4 mins.
    7. Serve hot with chapattis or steamed rice.
